Spaghetti Squash

Spaghetti Squash without sauceI discovered a new food yesterday - Spaghetti Squash. It looks like a really large yellow squash, and when it’s raw, it looks like pumpkin. It has the thick skin and gooey inside with seeds. But, if you bake it, the flesh can be pulled apart into spaghetti-like strands. It’s a little crunchier than pasta, but with marinara sauce, it’s a great, healthy, carb-free substitute. Very tasty!
Here’s the recipe I used:

  • 1 (4 lb.) spaghetti squash (serves 4 to 6) or 1 (2 lb.) spaghetti squash (serves 2 to 3)
  • butter and favorite seasoning (or favorite spaghetti sauce and Parmesan cheese, grated.)

Cut squash in half, remove seeds. Bake cut side down in baking pan containing small amount of water. Bake at 350 degrees for 45 minutes. After cooking, pull strands free with a fork. Toss with small amount of butter and season to taste. Or serve with your favorite spaghetti sauce and grated Parmesan cheese.

    I had this for the first time the other night when we ate out. It was slightly sweet. And I didn’t even know what it was until I over heard some other people next to us talking about it.

    I tried it around three years ago, and tried to keep cooking it until it got soft like pasta, but it never happened.

    I hadn’t had it again until Bonefish Grill started serving it as one of their sides. It’s good, but it won’t fool you.

    Something really interesting to try is Ruby Tuesday’s mashed Cauliflower. I almost barfed when I had it. Something to do with the texture not matching the flavor.

    Thank Heaven for Spagetti Squash! I am diabetic. I don’t take medicine, and I want my sugar count down. I now have been cooking this once a week, and get a huge bowl from this. I get better results from a very large ..5 lbs+… cut in half and 15 minutes in the micro wave. I use one jar of alfredo sauce. I cheat with the sun dried tomato alfredo, (diabetics should eat very little tomato anything!), but this alfredo does not raise My sugar. Plus one jar water. I add one pkg of fried hamburger, broken up, and a pkg of mushrooms. I mix it all together. I can use chicken or turkey or sausage instead of hamburger. This gives me a Huge amount, which I can eat 5 or 6 Large meals from. I at times will also add cheese and melt it, on top. Yummm! Low in carbs, low in calorie, and once you slow down on the eating carbs…..it tastes very very sweet. My sugar won’t go over 100 now after eating this, and I have no cravings. My miracle food!!!!!!
